For two!
Ingredients
- 1 cooked corn on the cob
- 2 small red peppers
- 1 small red onion
- 1 small Italian Tomato
- 1 ripe peach (not too ripe)
- Small handful of parsely
- Salt and Pepper to taste
- 3-5 drops Lemon Essential Oil or juice from half lemon (not lemon extract which is usually diluted with alcohol)
- Olive oil
Finely chop all ingredients and blend together adding salt and pepper to taste. Dressing is olive oil, red wine vinegar with lemon essential oil or you can omit the vinegar.
