Cooking with Lemon Essential Oil : Lemon Pie & Lemon Loaf




Easy Lemon Pie

A perfect recipe for spring, light and fresh!

Crust
  • 2 cups crushed graham crackers or gingersnaps
  • 125 gram butter. (4.4 0unces)
  • Melt butter and mix with crushed graham crackers. Press firmly into spring form pan and refigerate for a couple of hours.
Filling:
  • 8oz / 250 gms cream cheese (room temperature)
  • Sweetened condensed milk (1 tin)
  • 1/2 cup of  fresh lemon juice
  • 2 -3 drops of quality 100% pure Lemon essential oil 
Beat cream cheese and gradually add condensed milk.  Once mixed, add the lemon juice followed by the Lemon Myrtle.  Blend well.  Pour into graham cracker shell and chill until firm.

Lemon Cake
This is a family favourite!  Makes 2 loaves



  • 3 c. flour
  • 1/2 tsp. salt
  • 2 c. sugar
  • 2 tsp. baking powder
  • 4 eggs
  • 1 c. margarine, room temperature (can be replaced with butter)
  • 1/2 c. lemon juice
  • 1 c. milk
  • 1 - 2 drops of quality, 100% pure Lemon essential oil
Glaze
  • 1/2 c. lemon juice
  • 1/2 c. sugar or icing sugar
Preheat the oven to 350ยบ.  Use 2 9" loaf pans

Recipe
  • In a large bowl cream sugar and margarine together.
  • Add the lemon juice and lemon essential oil to the sugar mixture and continue beating.
  • Add the eggs, one at a time to the sugar mixture and until well blended.
  • In a small bowl, mix the flour, salt and baking powder.
  • Stir in the dry ingredients to the sugar mixture and mix.
  • Add the milk and mix.  Do not over mix.
  • Pour the batter into the loaf pans and bake for 30-40 min until golden brown.
While the loaves are baking, mix the sugar and lemon juice over low heat until the sugar is completely dissolved. Set aside.

Glazing
Once baked, remove the loaves from the oven and use a skewer to poke holes on the top of the loaves. Gently spoon the glaze over the top and allow to soak in before adding more glaze.

Let the loaves sit for ten minutes before removing from the pans and serving.

Start with your favourite rice pudding recipe and add 1 or 2 drops of your preferred Essential oil flavor/ per cup of rice.  Consider nutmeg, cinnamon leaf or even lemon to name just a few.

Cardamom Essential Oil, Cardamom Spice Bread, Spicy Rose Cologne and more

Cardamom Loaf

It took awhile for me to like Cardamom spice.  Still today if a curry dish or lamb rub has too much cardamom I find it overwhelming, the aroma taking over the dish.  But I can't deny when Cardamom is used correctly, it offers a unique, slightly smoky fragrance which adds a wonderful element to a meat dish, dessert or perfume.

Cardamom is a perennial herb and belongs to the same plant family as Ginger.

Cardamom spice has a unique taste, slightly smoky and at times pungent.  The oil offers a sweet, spicy, fresh fragrance, clear to pale yellow in color and slightly watery in viscosity.  The green cardamom is used in sweet foods while the black cardamom is used in curry powders.




{Spicy Rose Cologne}
Simply combine the following essential oils with their corresponding formula:
- 3 drops each of cardamom
- 2 drops of jasmine essential oil
- 2 drops of frankincense essential oil
- 3 drops of rosewood essential oil 

Blend all together with 1/2 cup of rose water in a dark amber bottle with a spray mist.  Shake well. It should last quite awhile since it is made with rose water.  Cardamom is a middle note.  To understand notes in perfume making, read our article on Notes Primer.

Peach Salsa with Lemon Dressing (Lemon Essential Oil)


For two!

Ingredients

  • 1 cooked corn on the cob
  • 2 small red peppers
  • 1 small red onion
  • 1 small Italian Tomato
  • 1 ripe peach (not too ripe)
  • Small handful of parsely
  • Salt and Pepper to taste
  • 3-5 drops Lemon Essential Oil or juice from half lemon (not lemon extract which is usually diluted with alcohol)
  • Olive oil


Finely chop all ingredients and blend together adding salt and pepper to taste.  Dressing is olive oil, red wine vinegar with lemon essential oil or you can omit the vinegar.
